Toss up between Good King Wencelas and God Rest Ye Merry Gentlemen. Greensleeves is great but i've always thought of it more as a love song not a Christmas song. Enya does a beautiful Irish Gaelic (there are 3 different dialects of Gaelic. Irish, manx and Scots) version of Silent Night.
I have yet to hear Mediaeval Baebes' Christmas cd of medieval Christmas hyms.
