If humanity is meant literally (Jesus was a human being who lived and died), either of the traditional Christmas stories (such as Luke 2:6-7) tell of his birth, while the passion stories (such as Luke 23:46) tell of his death.

There are also any number of passages that tell of Jesus' humanity in a figurative sense (showing compassion for others). The whole Sermon on the Mount comes to mind.

The synoptic Gospels, by the way, are Matthew, Mark, and Luke.
