I only ask cause I have some new friends that don't eat ham. Somethin about their feet being hoofed or something. Heck I wasn't gonna feed them pigs feet anyway. That's what you eat in the bar if you're drunk enough. Anyway, turkey is out what with PETA moaning and groaning about it. So I figure I can slop some Dinty Moore beef stew on all the plates, but it just doesn't seem all that festive. So if I roast up a real good looking possum (one I only ran over once) with all the fixins, do you think my guests will ohhh and ahhh when it's carving time?

And what's the best stuffing? Oyster? Cornbread? Or maybe beef stew?

Sure could use your help here.

According to the book "Redneck Cooking For Dummies"... Possum is a perfectly acceptable main course for any festive holiday dinner.

They further go on to say that the most common stuffing is one made with 4 cans of mashed spam.

They suggest a fine malt beverage such as schlitz to help wash down the holiday meal.

Dessert is something special at according to "RCFD". They suggest little debbie powdered dougnut holes with a nice Jack Daniels dipping sauce.

Ah Road Kill Stew. Now to make sure you have enough for everyone make sure you pick some squirrels too. Put them all in a big pot and put the vegetables in there too. You don't really need stuffing with stew but you might want to bake up some cornbread right nice to go with it. I hope you enjoy. Also I have a real recipe for elephant stew with rabbit on the side just in case you need that too. Just let me know.

STUFFED POSSUM


Skin possum, remove glands and end trails, Scrape and clean,
Scald in boiling water. Rub inside and out with salt and pepper. Set
in cool place and prepare stuffing.
1 cup chopped chestnuts
2 sliced sweet potatoes
1 cup apple sauce
1 cup boiling water
1 cup bread crumbs
1/2 cup lemon juice

Combine chestnuts, apple sauce and bread crumbs.
Stuff possum, cover with sweet potoato slices.
Put into roasting pan, pour water and lemon juice over possum.
Bake at 350 degrees till done, basting often with melted butter.

1 possum
1 onion
1 clove garlic
clarified butter
olive oil (enough to brown meat without becoming dry)
1 cup dry red wine
flat or field mushrooms, sliced (big meaty ones)
2 tablespoons fresh herbs (a mix of rosemary, thyme, marjoram, dill and parsley)
1 tablespoon tomato puree
1 cup dark beer, eg black mac,monteiths
1 cup brown possum stock
1 tablespoon marsala


1. Skin and bone the possum (use only the best meat for the casserole, ie: the strip loins and hind quarters, cubed).
2. Reserve the carcass and trimmings for stock.
3. In a heavy pan, heat the clarified butter and oil.
4. Sauté onion and garlic.
5. When onion is clear, remove to casserole.
6. Dust the cubed possum with flour and brown in batches.
7. Add to casserole.
8. Melt a little more clarified butter and sauté bacon and mushrooms.
9. Remove to casserole De-glaze pan as necessary with red wine- add this to casserole together with herbs, ground pepper, tomato purée, beer and marsala.
10. Stir, cover and cook in slow oven for 2-3 hours, adding more possum stock if necessary.

Serves 4-6

I saw a skunk that had been run over on I-94 yesterday. Today when I went by the smell was mostly gone. Look for day old skunk to stuff the possum. YumYum.

Goodness gracious me, all this talk about possum and stuffin' is givin' me a hankerin' for some deep fried pigeon. mmm...mmm. You eat a piece of that, an' you'll never wanna go back to chicken.

Only if you're hungry enough.....why don't you try for some armadillo....it's nothing but a possum on the half shell.
