I live in a small town, so you know how tongues wag quickly at the slightest thing said or done. Well my husband recently went into driving a truck and is hardly ever home. He wont even be in when our best friend (who is a guy) comes in. Our friend is going to need to stay at our place for a little while, maybe a couple days to a week. Then also off and on. So I have no idea what to do!!!!! Mine and my husband's son will be there too, so i don't see what the problem is (niether does my husband), but his mother can be a little overobservant and overconclusive. Please help, what should i say to make her feel more at ease???

Nothing. You don't need to explain yourself to her at all. And if you try to explain the situation, you'll only make things worse by giving her a reason to think she should jump to conclusions. If she has any questions about the agreement between you and your husband regarding his friend, then she can ask him, since she seems to have such a problem talking to you like an adult.
