The commercial has mascots of teams with legitimate Heisman candidates such as a gigantic Buckeye (Ohio St.) and a Mountaineer (West Virginia), but I've also seen a Cyclone (Iowa St.), a Sun Devil (Arizona St.), a swarm of Yellow Jackets (Georgia Tech), a Trojan (USC), an Elephant (presumably Alabama), and a Tiger (LSU? Auburn? Clemson?), teams which certainly don't feature a Heisman candidate. My question is, why were these random mascots included, and why was the mascot of preseason Heisman favorite, Brady Quinn, not included?

It mostly has to do with the fact that most of those teams are powerhouses. Plus the fact that just having 5 mascots wouldn't be as cool has having all of the different mascots chasing and tackling each other.

It's the Buckeye of the Ohio State Buckeyes. There may be some subliminal messaging going on too, seeing as how the buckeye is the biggest mascot on the commercial. Could be Nissan's way of showing who they think should get the Heisman.

They made this commercial probably a few months before Brady started doing really good and established himself as a Heisman-candidate QB. Plus wouldn't a leprauchan get run over by all those other animals/people? lol

Because leprechauns are not cute enough for a commercial.
