Well the best way I know how is to use heat and textures...
for red, perhaps hold their hand over something hot...
for blue, get them to put their hand in something cool...
green...soft velvet or grass...
etc....

use your imagination for colours...

I would use taste to describe the color to a blind person

red - spicy as in heat (hot peppers)
orange - carrots
light green - lime, lemon, citrus
dark green - spinach, leafy veggies
brown - spicy as in allspice, cinammon
yellow - eggs or custards
white - milk, rice
blue - ice
beige, tan - peanut butter
purple - beets, grape juice
black - coffee
pink - sugar, candy

In the movie "Mask" the guy shares color with his blind girlfriend by giving her a cold rock and telling her it's blue. Then she gave him a hot rock and told her it's red.

There were others, but I don't recall. You should rent the movie!

Colour is a measure of the light reflected by each surface. Different surfaces reflect light in different ways, which our eyes pick up in a similar way to how our ears detect sound transmission. Obviously our eyes can pin-point colour to an exact spot, whereas our ears cannot tell exactly where a sound is coming from.

Like in the movie "Mask" where Eric Stoltz showed his girlfriend billowy with cotton balls, red with a warm rock, etc. She understood the concept.
