I used to wonder about that too, then I found out. There are actually at least 3 answers.
1. 7 11 rents the places where they open their stores and buildings already have locks in place.
2. This reason I discovered personally, when I went to 7 11 and found door locked and closed sign on door. A guy was inside and, through the door, yelled that store was closed because they'd just waxed the floors.
3. Many 7 11 stores are robbed and stores need to closed for police investigations. Take your pick

Because maybe the owners one day will move the seven 11 and then they could put it up for sale and sell it to another convienient store who is only open 12 hours a day AND then 7 11 would not have to bother adding extra money to put locks on the doors.

For the night before they have their 1 cent Slushie sale, they have to prepare the store for the mad rush in the morning.
