Check to make sure but most schools don't allow projects that use live animals, including fish.

For someone young, a project on how the fish waste provides ammonia and nitrate that the plants use as fertilizer, and then the plants expell oxygen for the fish.
Or you could do a project on salinity and brackish water fish. Get a few black mollies and start them out in freshwater (provided they were kept in freshwater at the pet store) and then slowly increase the salt content of the water (using marine salt), testing the salinity levels regularly, gradually working them mollies up to living in brackish water, and finally in saltwater. Monitor the changes in other parameters as the salinity increases, like pH and alkalinity. This would take a while to complete, as you can only increase the salinity very slightly every day and the change is usually measured in weekly increments. This can be a display of how some fish are able to be born in rivers in freshwater and then migrate to the oceans in saltwater (via the brackish water deltas).

you can do a project where fish is important in an ecosystem...
get a really big tank, and full of real plants..the fish provides the poop for the plants and the plants frovide food and oxygen.... get a few guppies... they're cheap. and they'll eat algae.

you'll have to do more research on lighting and substrate.

or you can do fish mutation.... or fish heridity... look up Gregory Mendelson for inspiration.

again... use guppies.. they breed easily and often.
