This might not be quite what you're looking for...but this is one of the textbooks from a linguistics class I took in how language/dialect/accent develops.
English with an Accent: Language, Ideology, and Discrimination in the United States (Paperback)
by Ros Lippi-Green
I also remember there being a LONG documentary about this. I'm trying to track down the name of it. It was made probably in the mid-eighties or so. But it is interesting. It is shown on PBS now and then.

Do You Speak American? is a documentary film and accompanying book about journalist Robert MacNeil's investigation into how different people throughout the United States of America speak. The book and documentary look at the evolution of America's way of speaking from the English language to various ways of speaking in regions throughout the country. Divisions of ethnicity, geography and social status and how they affect how Americans communicate are addressed. As part of the project, MacNeil traveled across the country conducting interviews with ordinary people as well as experts such as John Simon.
In the United States, the documentary was broadcast in several parts on PBS. The companion book (ISBN 0-385-51198-1) was co-authored by MacNeil and William Cran.

This should be interesting. I've sometimes wondered about this, since I am from New Orleans. Why aren't most of accents closer to French, Spanish or African?
The only book I found that might fit the bill is Race and the Rise of Standard American (Language, Power, and Social Process, 7) by Thomas Paul Bonfiglio
