You can only unlearn the 'primary professions', like Alchemy, Enchanting, Blacksmithing, Engineering, Tailoring, Leatherworking (and eventually Jewelcrafting.)

Open your Skill page by hitting (default keybind) K. Click on the oval bubble that represents the Profession skill. On the bottom half of the window a description of the skill will appear. To the right of the skill a little 'do not enter' style symbol is shown. Click it.

You will then get a dialogue box saying 'Are you sure you want to unlearn this profession?' and if you're sure, click "yes."

Note: You cannot unlearn Fishing, First Aid, or Cooking.

Further, there is no limitation on the skill level you can achieve in your new selected profession outside of the standard level limits.

Yes. Open up your character screen (C). Go to the skills tab. Click on your profession that you would like to remove. There is a little red circle with a line through it to delete your profession. You will lose all the work you have put into it though. If you choose that profession again you will have to start from the beginning.

I believe there is...however you take a hit on the points. So if I were a Tailor and wanted to be an Enchanter instead...I think you get half the points you put in Tailoring to become an Enchanter.

Of course, it's been a good while since I played, so I may be full of beans!! You might want to check out one of the WOW websites and they can give you the straight scoop!
