I've read quite a lot of King's books and for the most part I've enjoyed them very much, but I have to say that, oddly enough, the "Bachman Books" were the ones that I found hit me the most, especially "The Long Walk" and "Rage."
They both have all that's good about King books, but the stuff befalling the characters isn't supernatural in the least.
Other than that, I loved the unabridged version of "the Stand," and all the classics. The Dark Tower Series is really good as well, I would recommend it.

I would have to say that my favorite would be the Dark Tower Series because it is so engaging and many of the rest of his books (Hearts in Atlantis, The Stand, Black House, The Talisman, etc.) are based on the same concept. I also enjoyed Nightmares and Dreamscapes cause some of the stories actually kept me awake at night.

Bag of Bones -it just seemed a bit different from some other books
Pet Semetary - the issues dealt with in this book, you really sympathize with the characters
The Shining - who needs a reason, it's a classic

The Stand
So MANY well crafted characters! I have always been a fan of how Stephen writes his characters - thier quirks, weeknesses, and strengths. This book is both character and plot driven!

The Stand--extremely well developed characters, good story line, fantastic bad guys/protagonists. My second favorite was Needful Things! I like his more complex and multi-character books.

my fiance loves the dark tower series, i haven't read it yet. my fave book of his so far is delores claiborne. it's such a great story, it inspires me both as a mother and as a woman in general. i know that if that situation happened with one of my daughters, i would do the exact same thing.
