Yes, mexicans normally claim themselves as WHITE on questionnaires or govt. forms, unless they are black, like lots of Dominicans.
They almost all have some degree of indigenous American blood, and a mixture of European blood, depending on when their ancestors came to latinamerica....It could have been the spanish back in the 1500's, or modern day euro immigrants. (lots of Nazis fled to Mexico and latinamerica in the 40's to escape tribunals).
When you take into consideration the gypsy and arabic genetic mix that the spanish immigrants to Mexico had, you really have a complex group.
My husband's last name is Amezquita which is a spanish name for "mosque".....His other last name is Gonzalez which is, believe it or not, of Germanic origin. (He is from Mexico)
He has medium skin, brown eyes and brown hair with yellow/orange streaks in it, which makes me think that perhaps he has some African heritage in his bloodline somewhere.
Now for the issue of Mexicans "looking" a certain way.
Being Mexican has nothing to do with race. That would be like asking what an American looks like. Which photograph would you show? As history states, the first americans were mexicans and other indians. That was followed by the french, spanish and dutch, then the dutch brought the slaves. Then the germans and scandinavians started coming....then the Chinese and Japanese.
What does an American look like?

I never thought of it as a race but as a nationality. I think most be people refer to them as the Mexicans like it's a race because they don't know what else to call them. Theyy are a mix of Aztec Indians and the Spaniards, some are even of Afro-Mexican decent. Mexicans and Spanish speaking people in general are just basically mixed raced.

Any person born in Mexico. If you were born in Mexico you would technically be a Mexican. Or anyone who legally denounces their former country and takes on a Mexican status. Don't forget there is a huge difference (geographically) between Spaniards and Mexicans.

For me, the 'typical' Mexican looks a mix of indigenous (Amerindian) and European.
