I actually know why in large part. Because I eat tons of carbs and fried crap. But I'm sure others can enlighten me to other issues. :)

Too many carbs, not combining foods for maximum protein, not enough exercise and soy products may be blocking you thyroid gland's hormone production.

It happened to me. I quit soy products, am now on thyroid medication and I am losing weight like I'm anorexic but I am eating everything in sight.

A lot of people become vegetarians and vegans without learning how to combine foods for protein.

Just because you aren't eating a lot of fatty foods does not mean you are not consuming more than your daily energy requirements. It is hard to be a vegan and get all the nutrients you need from the minimal caloric requirement sized meals. Besides the food aspect, do you exercise? This is an important part of any weight loss/management program. I will give you a general outline of what you can do, but as I am not a vegan I do not know how well this will fit in with your lifestyle:
Up the protien, down the starch, but eat as many green vegetables and fruit as you want.
Do some form of cardiovascular exercise at LEAST three times a week for twenty minutes, and have one day each where you work (chest and back), (arms and abs)and (legs) doing some form of resistance weight lifting. Even though your goal may not be to build muscle, this will ultimately help you to lose weight, and if you keep the weights low you will not bulk up, but tone and tighten existing muscle.
Good luck, and as a final word of advice, make sure, if you have not already, to go over your diet with a nutritionalist to make sure you are getting all the base nutritional needs.

Vegan doesn't necessarily mean healthy. The carbs in vegetables and fruits will turn to sugar and fatten you right up if all you do is eat, sit, and sleep. You still have to move around. Give up the soda and juice, too.

[ADDED] I see your additional detail (after my reply above). Looks like you're looking for excuses. "Tons of carbs and fried crap" is the best explanation you're gonna get - and you provided it.

Being Vegan doesn't automatically = weight loss. Ever see a cow? A Brontosaurus was an herbivore too. You have to balance what you eat with excercise. That's the ONLY healthy way to lose unwanted pounds.

Your metabolism is different I suppose. It is possible that some people can eat as much as the next person yet never gain as much weight.

Whilst others will gain weight, with Veggies. There are overweight strict religious vegetarians as well, such as some amongst the Hindus and Buddhists.

What else do you do? Along with a good diet you have to exercise occasionally too..Try moving!!..Works like a charm..I promise..

healthy + exercise = good body
u need to exercise daily, at least 15min a day will help.
