There were plenty of jobs to choose from, though not as many as nowadays. There were also doctors, nurses, secretaries, film producers, actors and actresses, teachers, chemists, university professors...and the list may go on.

Get hold of a book by Alistair Cooke (the commentator who wrote 'Letter from America' for the BBC until his recent death) with a title like 'Travels Around America.' I regret that I can't find my copy but if you look at Amazon for the most recently published book by Alistair Cooke - and read the description just to check that you've got the right one - you'll find it full of information. He was British-born but went to live in the USA in the late 1930s, and shortly after the USA entered the Second World War he took a motoring trip all around the States and wrote a book on what he observed, including a great deal about the effects of the war on employment patterns.
The manuscript for the book was thought to be lost until they were clearing out his effects after his death, when they found it and published it just a few months ago. (That's the description you should look for at Amazon). It really is quite fascinating and closely-observed, and discusses matters like the impact of the war on farming; on the change-over required of various manufacturers (e.g. from cars to airplanes, the construction of Liberty ships, etc.) and the consequences for shifting labour patterns as - for example - towns found themselves suddenly having to support another 20,000 workers who'd been drafted in to meet the new manufacturing demands.
I think that's one of the most complete and most accessible sources of information you'll find, other than having someone parrot a list for you which won't add much to the store of understanding.
