Box turtle or tortoise?
Box turtles should eat about 75% bugs, insects, arthropods, etc. This can include some low-fat meats. The rest can be varied veggies, fruits, berries, and mushrooms. http://www.boxturtlesite.org
Tortoises should have a diet like this: http://www.petdoc.ws/TortDiet.html

NOT lettuce... it's bad for them (iceberg anyway). It depends on the species. Box turtles and some tortoises are omnivorous while other tortoises are vegetarians. Vegetation can include collard greens, mustard greens, dandelion greens, escarole, endive, various kinds of squash, carrots, pea pods, green beans, and limited fruit such as berries, apple, fig, banana and papaya. Those that are more omnivorous can also eat crickets, worms, fish, occasionally even baby mice, as well as boiled ground turkey, low fat canned dog/cat food etc... Stay away from commercial "turtle pellets," except as a supplement. They really aren't very healthy at all. Variety is the most important thing. A diet of "lettuce, carrots and crickets" or "Pellets and dogfood" won't keep a turtle/tortoise healthy for long.
Diet varies from species to species... Try finding a specific species you want and then researching it. I recommend a box turtle or Russian tortoise.

Most native land turtles are omnivores. Fifty percent of their diet should consist of protein in the form of insects, worms, slugs, snails, feeder fish, and cooked egg. They'll eat a wide variety of vegetables as well as fruits. I recommend staying away from iceburg lettuce as it mostly water and can cause diarrhea. Vegetables can be about thirty percent of their diet. Zucchini, squash, carrots, beans, dandelions, asparagus, mushrooms, bell peppers, tomatoes, and peas are just a few examples. Fruits are relished by box turtles, but need to be limited to ten percent of their diet. Berries, apples, pears, apricots, persimmons and melons are eaten by most native turtles.

Land turtles and tortoises both eat lettuce and chopped up carrots. Turtles eat vegetation and insects and larger ones may eat small animals. Some are scavengers and even eat dead animals.
