Sex is an act. There is no such thing as a sex role. Gender is the actual label denoting whether a person identifies as being male or female. Therefore, someone can choose to assume the gender role of a man or woman during the act of sex.

gender roles are what people do (culturally) because of their gender, for example men fix things, mow thelawn or clean the gutters or fix the car and women cook or clean or shop.

sex roles normally refers to roles people take during sex.
like one person may "pretend" to be dominant and the other submissive (it could be either gender) or they could play roles like schoolgirl or prostitute or hitchhiker picked up, etc.
as a fantasy to enhance sex.
