Should we just keep to "my writing skill" when we refer to just a skill. But I see many people use "improve my writing skills". Are both phrases above correct? Please explain in details.

Writing skills is correct. Because you are talking about you skills of writing, there are many different elements that go into writing something. If you were talking about your basketball skills it would be the same thing, as you have to shoot, pass, defend, dribble, etc. SKILLS works for pretty much everything.

The answer is "improving my writing skills" with an "S" at the end. Why? Because writing involves a number of skills, such as grammar and proofreading which are two separate skills.

Probably writing skills, I guess because writing consists of many skills..

improving my writing skills- being that there is more than one skill involved in the process of writing.
