the last 2 mornings its been in the lower thirties my thermometer gauge of course is on the blue as the car is warming up, and instead of gradually warming up the needle went all the way over as if it was HOT, the car wasn't over heating
when I restarted the car later the thermometer gauge was working properly,
any clue to why the needle would go over to HOT

Not to worry this is common in Bmw as they get older. see the Points inside of the thermo Is ice cold. when it heats up the first time the cold is removed so the thermo picks up a heat spike.You can replace the thermo it will be about $30.00-$40.00

it sounds like your thermostat is sticking for a couple of seconds when you first run the car. i would have it checked out because if it sticks shut for good then you will have over heating issues.

sounds like the thermostat is sticking. are you sure the coolant level is full? are there any check engine lights on?
