In the anime, you'll only see fighting that involves punching, stabbing, kicking and things of that nature that aren't too violent. In the manga however, you'll see far more blood that involves people being pinned on the wall with sharp objects and body parts being cut off (well at least in the recent manga chapters)

Yes, but they edited out most of it in the American version. The Japanese are less inclined to be as picky as the uber "let's protect our children from everything" parents.
