Apparently, it was because November was the most convenient time for farmers to get to the polls after the autumn harvest (back in the day when much of America was agrarian). Sunday was reserved for church and Monday wasn't convenient since travel would require them to leave on Sunday to get there by Monday. So Tuesday it was...

Because that's the way it was set up in the Constitution. It was probably due to the fact that it had to be after harvest season, get things in order at home for a trip, and enough time for people to get to the polls via horses (polling places weren't in every district).
