With a bit of imagination, of course!
Just don't make it too complex. You may end up stressing the gerbils!
Might be fun to do actually.

Gerbils naturally live in burrows - you can get closer to their natural environment by half filling a large tank (eg. a fish tank) with soil (include some rocks), and include a normal cage layout on top with food and water on a higher shelf and maybe some toys and plenty of wood etc. to chew. Because they will burrow into the soil next to the tank you will be able to see their burrows and their behaviour within them - I'm not sure if that's in the same style as the ant farms you're thinking of or not, but I think it would be pretty cool! :)

lol... could be fun... but as gerbils can chew through plastic tubing in a matter of hours your farm could quickly get out of hand!!

I WOULDN'T USE CLEAR TUBING, INSTEAD FRAME OUT LIKE A SHADOWBOX BUT USING PLEXIGLASS FOR OUTSIDES OF IT AND FILL WITH GERBIL FRIENDLY MATERIAL TO WHERE THEY CAN TUNNEL THROUGH IT.
