not money or a gift card where it's obvious how much money you spent. wouldn't be appropriate or professional.

the most valued thing might be a picture of everybody who he was working with and letters from everybody. maybe get a bunch of you together and take him out to dinner.

the friendly gesture is a lot more important than the material thing.

Think about what the person likes or what their personality is. Base the gift on that. Dinner is usually good choice. I think gift cards are ok if you know they frequent a certain place. It's very thoughtful of you to give a gift at all.
