The best live show I've ever seen was Roy Buchanan in 1988, about 4 months before he mysteriously died from hanging in a County jail. Better than Hendrix or Zeppelin on that night, no doubt. What a great guiatrist he was, and cut down in is prime years.
Right now the best touring bands are Metallica, the Red Hot Chili Peppers, or Tom Petty & The Heartbreakers. They all deliver a flawless show, and have proved it over the years.

U2 is by far the best live band in the world! Evanescence, Marilyn Manson (not for everyone), Bon Jovi, Mark Knopfler, Tom Petty & The Heartbreakers, Kenny Chesney, etc. all put on great live shows... Saw Carrie Underwood this passed summer (Summerfest in Milwaukee) and her live performance was very entertaining (not to mention she's so damn gorgeous)...

Not sure who the best live band is overall, though I've heard bands like Aerosmith and The Stones tear it up. Best band I've seen live is Tool...all 6 times.
