I'm going to major in Economics. This is certain. What I'm wondering about is if I would be more valuable to an employer (or any other helpful insights experienced persons may have in this area). Should I double major in history as well or major in economics and have two minors in history and political science? The amount of time and credits are almost exactly the same in the two situations.

No point in doubling in history or poly sci unless you just want to study those things. Those extra majors or minors won't add any value to your resume that economics doesn't already provide. If you have the opportunity, consider adding another major that in itself would make you more marketable and might qualify you for some job somewhere along the way -- maybe finance, accounting, statistics -- or if you're really got the time and talent computer science, EE, or chemical engineering. Now THAT would be double major.

That may not make sense to you now, but could really pay off someday when you're 30 or 35 and interested in job mobility or switching careers.

Finance. For all of the motives acknowledged above. Plus, it is regarded as a tougher measure. For if ever make a decision to difference careers, finance is extra bendy considering it indicates that you've a ability and the knowledge to get it.
