It does nothing, except help make them 'look' fresh.

IN-Store misting of vegetables/fruits does nothing more than to prevent the produce from drying out while on display. If you are curious about it removing pesticides, etc, it does not. You should still wash fruits/veggies before consuming.

It keeps the vegies from drying out, wilting and looking bad.

Nothing, just makes them look fresh so you'll want to buy them.
