Take the gas line from the fuel petcock on the bottom of the tank and drain it that way. You also need to drain the carb bowl.

The only problem with fuel stabilizer to "just let it set during the winter", is often, people end up letting it set a lot longer than intended.
I can't t ell you how many carbs I had to unplug the idle jet from people doing this.
I always pull the fuel line at the carb, stick the hose in a gas can, turn on the petcock, and let it flow.
Also, drain the float bowl. Sometimes, there is a drain plug on the bottom, others, you have to remove the bowl to drain it.

You dont have to drain the gas, you can mix in some fuel stabilizer, run it for a few minutes and park the bike for the winter and it will be just fine

Always give year, make, engine size and model # when asking questions.
Yamaha makes a lot of different dirt bikes. Explaining how to change each model's oil&filter is time consuming.

I think that the best thing for you to do is get a repair manual for the bike. It will explain most all of your questions and it will be fun learning and doing things yourself.
