I would talk about my experience working with diverse student populations and creating inclusive classroom environments. I would talk about my experience implementing inquiry-based education in the classroom AND I would show some examples of exceptional work that my students produced through inquiry-based learning during the time I was their student teacher. I can back up every claim I make with written comments from my professors and supervising teachers, and I also have a portfolio showing the work that my students did to achieve deeper learning. I might also enclose one of the thank-you letters I received from a former student.
If you don't have a portfolio already, get cracking! Mine is full of copies of my degrees and diplomas, certificates from professional development events, proof of membership in professional bodies and examples of work that my students have produced. I can talk about each certificate / degree and how it makes me a better teacher, and I can talk about each example of student work on a personal and class level.

The interviewer wants to know why you think you are the best candidate. If they see you struggle with a response then that tells them that you are not too sure of yourself. Why do you think you would be the best teacher for the position? What are your strengths? What skills do you posses that other candidate may not?
