People usually tell me that according to my diverse personality and looks that I should be an actor someday. Some casually say it, while others are serious. I really don't want to become an actor so what's a good thing to say back. Whenever I'm like, No thanks..people just keep on going on and on about how I could do this and that but really I'm not interested..how should I reply in a "nice" way and not to sound mean by saying it?

Smile and thank them for the compliment, then say nicely you have a higher calling. :)

the first thing could be "I've thought about it but no/don't like it" or say that people always tell you that (hinting you are a bit sick of hearing it) and if they're really getting to you just say that you will become an actor lol
but make sure you use a secure tone of voice though, so they understand you're sure about yourself

No offense but my passion is not in act its in ................(say what u like here) but i'm grateful for ur opinion & then POSSIBLY make a simple joke about persuing it another time (only if the person understands that u dont want to act and shows no sign of offense/if u know them well enough)
