Trans fat is a type of unsaturated fat. While they occur naturally in some meats and dairy products the majority of trans fat consumed by humans come from processed plant oils. Unlike other fats they are not beneficial for health and can increase the risk of coronary heart disease.

Since this has become common knowledge many companies have been removing trans fat from their recipes. For health reasons it is recommended you lower your consumption to trace amounts.

A trans fat is a modified saturated or fat often created by injecting hydrogen in other types of fat (including unsaturated fats like vegetable oil). It is often used in fast foods and baked good and has all the health problems of saturated fat plus the added problem that it counters fats (like monounsaturated fats) that neutralize saturated fats. So, essentially, it does double the damage of saturated fats. Avoid trans fats and hydrogenated oils at all costs.

Our cells (and many cells in the world) have the ability to synthesize fats that are unsaturated, meaning there are several carbon carbon double bonds. Normally these are formed in the CIS conformation meaning if the carbon atoms were arranged they were arranged like the following, atoms 1 and 2 would be carbons. Only lines are bonds, ignore dots.

Now, we can synthetically take fatty acid precursors, and add hydrogens to them in a way that the conformation would align the carbons at spots 1 and 4. This is the TRANS conformation.

A SATURATED fat contains no double bonds at all, it is completely saturated with hydrogen atoms.
