In "The Cajun Night Before Christmas" by Trosclair, there is a line that says, "An' Mama pass de pepper t'ru de crack on de do'." The illustration shows Mama passing a piece of paper through a crack in the door...Why??

So she would know if anyone opened the door. If the door was opened, the paper would fall to the floor.

because if she looked later and saw the paper on the floor, she would know someone had opened the door because the paper would fall..

"Pepper" in south Louisiana is how paper is often pronounced by Cajuns. It is the note to Papa Noelle/Santa Claus.
