Edit: You made me get more complicated ;)

The reason why we see blue all day and not different colours is because blue light has short wavelengths that get absorbed by the atmosphere and radiated in various directions making the sky appear blue.

The further the sun gets from us the further the light has to travel and the blue gets scattered so much that only the longer wavelengths get through (red and yellow).

If you wonder why we don't see a rainbow of colours we really do. Throughout the day the sky changes between different shades of blues, yellows and reds we just identify them as blue yellow and red since we don't know the actual names. The sky everyone is use to seeing really is more of a cyan colour then blue.

Original: If you want a very simple answer, here it is:

The white light from the sun is a mixture of all colours of the rainbow.

A clear cloudless day-time sky is blue because molecules in the air scatter blue light from the sun more than they scatter red light. When we look towards the sun at sunset, we see red and orange colours because the blue light has been scattered out and away from the line of sight.

Jeez, ignore Lucky's answer. She has got it butt about face. The sea is blue as a reflection of the sky.

Take note of the answers that talk of air molecules scattering blue light.
