Employers are also required to post the official regulations on a bulletin board. They are violating the law if they don't. Regulations vary by type of business and the posting will show how breaks and overtime pay is determined.

I am pretty sure the law is that you must a given a 15 minute paid break away from your work every 4 hours.

While I can't say for fast food, I worked in a very fast-paced place where it was 2 ten minute breaks and a half hour lunch break for a full shift. Mandatory. If I clocked in even 1 minute early from a break, I'd hear about it.
