I would have to say a minimum of 5 people per team. The pitcher, two infielders, and two outfielders. Depending on the size of the field you may need an extra infielder and an extra outfielder. There's no need for a catcher if it's a friendly game because they can always throw it back. Also if there's an odd man out you could assign someone to be all-time pitcher or all-time kicker.

as many as you want, but around the same as baseball, 9. But if you want subs maybe around 12.
