I bought a kit for my daughter who wants to make it ASAP but I want her to be able to eat it Christmas eve. Can I let her make it now and will it last till then? Or is it an eat right away thing?

I always wondered that too and hesitated buying a kit, but now I will. Check out the link below for more information.

Moisture and humidity will be the worst enemy (other than nibbling children!) of your gingerbread house, so be sure and display it in a cool, dry place. You may wish to cover it at night with plastic wrap to not only seal out moisture, but also dust, bugs, and other errant inedibles.

Properly sealed and protected, it is actually possible to keep a gingerbread house up to a year.

I would check the manufacturer's expiration date (if there is one) as well.

He is at the age where you are right this may be the last one. How about getting a can of clear coat and sparying ti down well. Put it in a garbage bag, then in a box, and put it out as many Christams in the future that you can. If you can get him to make more in the future great, but it may last for aniother 20 years or so with clear coat and just think how neat it will be to put it out when he s an adult. Keep in mind that for a couple of years he will make fun of you, or say it's so lame. Don;t; let his teenage side win. Keep putting it out. If you can talk him into another one next year make it a small one taht you can do quickly and if you have room keep that one too. I am a bit of a pack rat, but htose things are worth keeping as long as you can. ***Also if you can get him to take a picture with this one every year, it would be cool to hang pics up behind the house of every year past this year.

I dont think a gingerbread house is ever edible. Even fresh homemade ones are cooked to a point of hardness that they aren't very good. Soft gingerbread just has no structural integrity, you know? Plus, I dont like royal icing. But if your kid wants to eat one, its just as good after a year as it is after a day.
If she wants to keep it forever, she can do that too. I made my first gingerbread house seven years ago, complete with a gingerbread VW Bus in the front lawn. My best friend still has that bus and displays it every Christmas.

I never eat the gingerbread houses, they are always stale. But they will not spoil, if thats what you mean.

make it christmas eve or use saran wrap to cover it up and it should be ok i would read the box!
