I'm reading Oliver Twist by Charles Dickens...and he keeps saying "the parish authorities" What does he mean by parish? I looked up the word and the only thing that came up was something about religion and administrative subdivisions. Thanks in advance.

a parish is the local religious community, who all go to the same church, the parish authorities would be like the bishop and priest etc of that area

A parish is like a county. Louisiana is divided into parishes, and the authorities aren't necessarily religious figures, for example the parish police.

As far as I know, a Parish is a Church Congregation. He may also mean the town authorities though, given the time period of his writing.

a parish is like a county or district...it's just a way of organizing an area of a city or town...since the church ran things for so long in England, the religious term stuck
