Do they do it intentionally or does it just happen in some people?

There are two reasons. It's called Vibrato. The first reason is because it is a musical technique. It's used a lot in opera/classical music. It's something that has been around for a long time that gives a great feeling of expression. The other reason is that some people cannot stay in tune if they try to sing on a steady pitch. Vibrato helps make it interesting and moves the piece more.

I guess they're just really feelin' the moment. I've heard that it can help with the vocals, and do something to extend the pitch, and make note last longer, but I don't know. I've never shook my jaw like that when I sing, or at least not that I've noticed. But then again when I sing, I'm trying to keep the note and the pitch so I probably wouldn't notice it.

It's manipulation of the tremolo/vibrato effect. I love Jim Nabors voice, but I can't stand to watch him sing.

Some people have a natural vibrato, some people sort of 'aid' their vibrato with the movement of their jaw.

It's not just pop singers that do it. In answer to your question, I guess it helps them carry the note or something. I'm not a musician so it's strictly a guess.
