When the truck has not warmed up it will slip out of gear. And after the hand of the temperature gauge goes back up the truck will go back in gear

The temperature hand goes down because it is cold. The lubricant in the transmission is cold also. Obviously wear and tear have set in and the syncro rings are not engaging fully. When the temperature (needle) goes up and the lubricant warms up the wear is decreased allowing the synchro rings to fully seat and the trans to not jump out of gear. Time for a transmission overhaul.
