I have a stainless teel pan at home that, from what I can see, is all metal. So I would expect the handle [also metal and joined to the pan] would also get hot when I boil water in the pan, but the handle doesn't .

I bought this pan about a year ago.

What technology do they use?

Just like stainless takes longer to heat up than copper. The handle is made of less condutive alloy and heat transfer is part of that as well.

It's called heat transfer. The heat is transferred to the air, so the handle being out away from the pan stays relatively cool. I also have a nice SS pot, and it's handle does sometimes get pretty warm, but not so much I can't hold the pan when needed.
