After you have typed the email, you can use your scroll wheel on your mouse (while holding down the control key) to increase or decrease the size of the text however much you like!

Depending on your e-mail program you may have an option right on the compose screen to change size and color.Also, with the AT&T/Yahoo e-mail you can go to an option page and change text size and backgrounds and such.

You can't. Mail is 7-bit ASCII only. What you want to do is to send HTML instead of proper mail. You shouldn't do that because many mail client cannot displey HTML properly, or are configured to convert them back to plain text anyway. Some folks like me set their spam filters not to receive any HTML formatted mail at all.
