It depends on the dictionary, but even if there's nothing else after it (like unit conversions or other tables & references,) the last entry will also have at least one *definition* or "see..." reference after it, so the last *word* will not necessarily start with "z" unless the entry also lists other tenses, etc. after the definition(s).
