Hi, what you refer to is called "gaping". Gaping is used as a form of evaporative cooling. Not just crocodiles use this, American Alligators, Chinese alligators and I have seen a variety of caimen that do this as well. However, most commonly seen in this practice would be the Australian Saltwater Crocodile (Crocodylus porosus) and the Nile Crocodile (Crocodylus niloticus). All crocodilians are like other reptiles and are ectothermic (relying on the environmental temperatures to control their own basically). Controlling their temperature is referred to as thermoregulation. Thermoregulation is done by generally coming out of the water early in the morning and laying on dry land. They allow the sun to warm their bodies on the outside, the warm blood will flow to the internal organs and this helps warm the body much quicker. As the body starts reaching the animals Preferred Body Temperature (PBT) they will at this time start opening their mouths to Gape. It will allow moisture that is warm to escape the body and allow the animal to stay a little cooler without having to retreat back to the water so quickly (at this time the water might still be on the cool side).
As the day progresses, they will then use different natural surroundings to help them control their body temperature. This could be lighter or darker shade, direct sun, shallow water, deeper water or fully submerging to the bottom where the coolest part of the body of water will be.
For those stating it is due to certain species of birds to clean their teeth, this is only a secondary benefit to the real reason why this is done. Most of ALL crocodilians perform gaping, but the Egyptian Plover bird (and a few others) are only present for the Nile Crocodile. No other species has this benefit.

Crocodiles Keep their Mouth open so that birds come and eat the worms sticked betw their teeth. By this the crocodile gets its teeth cleaned and the birds gets the food.

crocodiles keep their mouth open when they feel threatened. the reason is all the power in crocodiles bite is force closing shut not opening up so they keep their mouth open so that they don't get caught or captured.

a crocodile by keeping its mouth open invites the Egyptian Plover bird..the bird preys on the parasites in crocodile's mouth.. this is an example of symbiosis. symbiosis is an interaction betweentwo organisms where at least one benefits.. some other examples r relotionship bn clown fish n sea anemones.
