I would do something either by Avenged Sevenfold, In Flames or Killswitch Engage. Depends on what style I'm trying to show off. If anything, I would play "Sidewinder" by Avenged Sevenfold to show off every kind of style (PS - the spanish guitar solo at the end is rediculous...take a listen)

you could list loads couldn't you?
For impressing the ladies i think it would be Satriani 'Always' or 'Crying'. Eric Johnsons 'Cliffs of Dover' is fiendishly difficult to do well but a good piece for showing off, but if there is one piece I would love to be able to play perfectly it is Stevie Ray Vaughns version of Little Wing

I am another Stevie Ray Vaughn fan. Blues, Blues/rock and Rock. he was the best. if I could play half as well as he did I would be a very happy man.
