i have a 383 and 3.90 on the rear end would a 3000 stall be good for it?

If you want a 'neck-jerking' launch then install higher RPM converter. Depends on what you are going to do with vehicle.

Weekend fun or daily driving. Installing a 'neck-jerker' converter for everyday driving will get old....fast.

yes we cant answer your question without knoqing what rpm range your engine is built for
3000 stall is an AWFUL high stall rating for even a hot street engine

if your engine has super high rpm range well above 5500 rpm and you anticipate the engine running around 2500 rpm sititng on the starting line to take off then maybe 3k stall is ok but its sure alot

Your cam is going to dictate your need for stall. If the motor is stock or mildly modified go with a "Saturday night special". I've got a similar set-up with a 11" TCI 2400 rpm and it is way to much.
