This isn't going to be the answer you want, but there is no recorded reason for his death.

There is, however, a story that he died of sorrow because of the constant rebellion of his son, Salim.

He was the ripe old age of 63 when he did die, so he had lasted pretty well.

On 3 October 1605, Akbar fell ill with an attack of dysentery, from which he never recovered. He is believed to have died on or about 27 October 1605, after which his body was buried at a mausoleum in Sikandra, Agra.
