Well you get cheese cake that has the cream cheese filling inside a pastry crust (or sometimes biscuit crust). Then, it would seem as a pie but there are lots of cheesecakes where there is only a biscuit crust layer at the bottom and the rest filling, hence the word "cake".
As for the "cheese" think that's coz of the usually main ingredient cream cheese. I have made cheese cakes that has ricotta cheese.
