Go Ice Skating, Go Bowling, or go for dinner at Maggianno' then shopping at the forum shops.
Or you could go hang out at a sports book and watch the Monday Night football game.

If you're close to the strip walk down it and look at all the tourists trying to live it up. Or go to Henderson on the side of the mountain that overlooks the strip and watch the lights. Very pretty.
