We had always had a gas stove. When we built our new house, I talked my wife into an electric (we got one of those smooth tops). Big mistake! I love a gas stove because you get an instant response when you turn it up or down. On this electric thing I have boiled over more pots than I ever did on gas. My wife says, "I told you so."

Gas stoves, no question about it.
With a gas stove the heat is immediate. The flame is there and the pot will start warming up immediately. With an electric stove you have to wait for the burner to get warm and then for the burner to start warming up the pot. The reverse is also true. You turn the flame off and the heat is gone. With an electric the heat remains, sometimes with bad results. Ever had anything stick to the bottom of a pot because it got overcooked on the bottom? Be prepared to see that all the time in your new electric stove. You have to remember to move it off the hot burner.
The ONLY disadvantage with a gas stove is that you can't simmer very well. Yeah, the flame is infinitely adjustable, but the problem is that unless you have a diffuser plate for the flame, you will have a hot ring on the bottom of your pot and the rest will have to just warm up through conduction instead of direct contact.

Some people prefer gas saying it gives a more even and slower heat, I think it's just hardewr to judge teh heat setting until you get used to it. Venting is not as important with electric, unless you left something flammable on the stove top you don't have to be afraid of a child or pet knocking the gas on, and no tanks or gas lines to leak or cause worries if you have a housefire or earthquake. The bad thing is when the power goes off, you have no way to cook or for alternative heat (gas/propane stoves should not be used for continual heat, and agian the venting issue, but they can help prevent hypothermia by heat and heating food/liquids). And if you can get "night rates" you can do your baking with an electric stove when rates are cheaper, but generally electricity costs more. It's a gamble, most people have a microwave anyways, so I'd say a gas stove is better.

Electric is better. They do not produce CARBON MONOXIDE unless you don't clean them. The cost analysis of gas vs electric is almost the same cost for either. As for safety, buy a Magnetic Induction stove they heat food by magnetic induction, but unless the pot is on the burner, they never get hot!
Never heat your house with a gas stove. You vent your furnace, why wouldn't you vent the stove, the same dangerous gases come from the stove that go up the chimney from the furnace.

I have had both and I loved the gas stove way more then the electric. Instant heat with gas, and nearly instant cool. it takes less time to cook but I would say it is less likely to burn things on an electric stove. if you want to switch your appliance, newer homes usually have gas hookups in the kitchen just for that reason, at least they do in the northern part of colorado...

I have elect and like gas better. When you turn heat up or down gas happens now, where elect takes a while. More scorched food or you can't get the heat when you need it. They say you get use to it, B.S. I've trying for 25 years now and going back to gas.
