Why is it that what doctors and vets do, they call their ‘practice’?

Cuz they don't always know exactly what they're doing. They guess. So, they practice.

Doctors are practitioners of medicine. Their practice would be their business.

because... they practice.. so now you know... they've been just practicing on you...scary
