Yes, you are correct--except that you should capitalize Saturday. "Saturday's" is the proper possessive form of the word "Saturday." The only time you would use "Saturdays' " (with the apostrophe AFTER the "s") would be when you were referring to more than one Saturday.

It's right and the 's on saturday is right also, saturdays' would be belonging on more than one saturday.

yes it is right, but, I don't think you need the 's on saturday,you are not leaving anything out. so I think it should be saturdays' meeting..
