how to use them? what do they do? which is better, to use do meter or the winkler method?

try the HACH website. this is one of the leading manufacturers of water analytical equipment.

Mettler Toledo and Broadley James would be better sites to use than would HACH. Also if you just need a hand held moder try VWR.
